Hana Kahleova, M.D., Ph.D., is the director of clinical research at the Physicians Committee and directs research studies analyzing the effect food choices have on insulin resistance and the regulation of a healthy body weight. Her current research includes analyzing the thermic effect of food in response to a 16-week dietary intervention. Dr. Kahleova has published more than a dozen nutrition studies. She is the author of Vegetarian Diet in the Treatment of Diabetes (Maxdorf, 2013). She also wrote the chapter about using a plant-based diet to treat diabetes in Vegetarian and Plant-Based Diets in Health and Disease Prevention (Academic Press, 2017). Her favorite research topics include testing the effect a plant-based diet has on metabolism, insulin function, fitness, and mental health, as well as studying the impact meal timing and meal frequency have on metabolism and body weight. Dr. Kahleova earned her doctorate in nutrition and diabetes and her medical degree from Charles University in Prague, Czech Republic. As a postdoctoral research fellow at Loma Linda University in California, Dr. Kahleova analyzed data from 50,000 Adventist Health Study-2 participants. She analyzed data on meal frequency and timing in relationship to changes in body weight. She finds two to three meals a day, without snacks, are optimal for body weight control. This led to her recommendation to eat breakfast regularly and to make it the largest meal of the day.

Keeping the weight off without going insane or feeling deprived

Chuck Carroll

Chuck Carroll is host of the Physicians Committee’s popular “The Exam Room” podcast and known widely as The Weight Loss Champion, a name given to him by an NFL player for losing an incredible 275 pounds. At just 5 feet 6 inches tall, Chuck weighed 420 pounds and had a 66-inch waist before radically changing his life. Before that, like so many others, he tried and failed countless times to lose weight. Any success he achieved was short-lived as the weight came pouring back on and then some. At his heaviest, he was eating 10,000 calories every day. Out of desperation, he decided to have weight loss surgery in 2009. Prior to the procedure he was convinced that it would become like all the other failed attempts to lose weight. Chuck was just 27 years old at the time and didn’t believe he would live to see 30. He thought at least he would go to his grave saying he tried everything. But then the unexpected happened. He woke up from the surgery and never looked back. Although a critical component, the procedure proved only to be the first step in his journey. In fact, he only attributes 10 percent of his long-term weight loss success to it. The rest he credits to a plant-based diet and changing his lifestyle! By adopting a plant-based diet, he is no longer afraid of regaining the weight as he had so many times before — no more yo-yo dieting! He is thrilled that he is lowering his risk of cancer and Alzheimer’s Disease, both of which run rampant in his family. As a bonus, he is no longer spending massive amounts of money on medical expenses because of his optimum health! The confidence he gained from the weight loss enabled him to pursue his dream of becoming a reporter where he covered sports and news for CBS and later NBC News Radio. He was also previously featured in PCRM’s Teaming Up 4 Health campaign where he had the opportunity to speak on Capitol Hill and share his remarkable journey. Now he is delighted to be bringing his passion and talents to the Physicians Committee as host of The Exam Room and to show others that the impossible is possible — you can get healthy!

Dr. Jaimela Dulaney

Dr. Dulaney attended medical school at West Virginia University and a residency and fellowship at the University of Pittsburgh in Internal medicine and Cardiology. She spent over 15 years in a traditional medical practice adhering to the guidelines for treatment set by the American College of Cardiology and American College of Internal Medicine. The goal was to manage lifestyle diseases and adjusting medications and doing procedures to keep the patient functioning at the highest possible level. Medications were added but never taken away and patients were monitored with testing to detect early disease progression. Trying to hold off the family history of diabetes and heart disease, Dr. Dulaney began running marathons. Although she became fit, her lipid profile was not stellar by any means. After learning about the power of nutrition, she not only saw her own health improve and get off statins, she decided to add nutrition education to her medical practice. This is when her patients started making dramatic improvements in their diabetes, cholesterol readings, blood pressure, angina, and even their neuropathies and for the first time she was able to take medications away from her patients.

Why this is so urgent

weightlosscomplications_2

Obesity is linked to 13 different types of cancer

In 2017 health officials reported that there is a link between obesity and 40 percent of all the cancers diagnosed in the United States. The 13 cancers include brain, breast, thyroid, stomach, liver, pancreas, kidney, ovaries, uterus and colon cancers the researchers said. (during the summit you'll learn exactly how to lose weight AND protect your health at the same time!)

weightlosscomplications_5

Type 2 diabetes

Obesity is believed to account for 80-85% of the risk of developing type 2 diabetes. Obese people are up to 80 times more likely to develop type 2 diabetes than those with a BMI of less than 22. (the good news is that your body starts healing the moment you start losing weight the right way)

weightlosscomplications_4

Heart disease

Heart disease is the number one killer in the US and multiple large-scale studies have shown that "Obesity is among the leading causes of elevated cardiovascular disease (CVD) mortality and morbidity." (did you know that the fat tissue itself releases inflammatory molecules that can induce cardiac dysfunction and promote plaque?)

weightlosscomplications_1

Risk of stroke

Studies have shown that for each one-unit increase in BMI there is a 4% increase in the risk of ischemic stroke and a 6% increase for hemorrhagic stroke. That means just 20 pounds overweight increase the risk of stroke by 24%.

weightlosscomplications_3

Depression and Dementia

People who were obese had a 55 percent greater risk of developing depression throughout their lives. But that's just the start: We now know that the brain is significantly impacted by the inflammatory state of obesity. As a consequence overweight is now recognized as a factor in dementia and cognitive function. (that's why losing weight is so vital - not just to feel great today, but to give yourself a chance to feel great in your golden years)

weightlosscomplications_6

Processed food

60% of calories consumed in America come from highly processed foods. And only 5% of Americans get enough fiber. Fiber not only helps to manage a healthy weight, fiber is linked to reduced risks of developing various conditions, including heart disease, diabetes, and constipation. Chef AJ

As a chef Chef AJ gained weight over the years despite being a vegan. Disappointed that standard diets and your typical approaches didn't work she resigned to the "fact" that that's just the way she'd be for the rest of her life...

All this changed when she started cooking at True North Health Center. There she discovered the secrets to natural weight loss and has lost over 50 pounds - and kept them off for years. Today she is determined to live at least 100 and is proud to say that her IQ is higher than her cholesterol.

Chef AJ holds a certificate in Plant-Based Nutrition from eCornell University, is the host of the TV series Healthy Living, has made appearances on shows with Johnny Carson, Jay Leno, David Letterman and more. She is the author of the popular book Unprocessed: How to Achieve Vibrant Health and Your Ideal Weight, which chronicles her journey from an obese junk-food vegan faced with a diagnosis of pre-cancerous polyps, to learning how to create foods that nourish and heal the body. Her latest bestselling book The Secrets to Ultimate Weight Loss has received glowing endorsements by many doctors and dietitians. She runs live seminars, a weight loss program and YouTube shows which have helped hundreds achieve the health and body they deserve. And she has become famous for making sugar, oil, salt and gluten-free desserts that are just as delicious as their sinful counterparts...
